Leave the guts in the fish - It goes straight from the lake to the cutting board. 2. Cut behind the gills, straight down through the skin and meat to the spine. 3. Turn the knife and follow the spine down to the tail, but don't cut it free at the tail. You'll use the fish as a handle for that slippery fillet. 4. Flop the fillet over so it is skin side down on the board. 5. Hold the trout and slide the knife between the fillet and the skin. Don't saw or you'll cut through the skin.
