Watch Karen Bates of Apple Farm, Mendocino County, CA, share her grandmother's recipe on how to cook a turkey in the oven. Karen also shares tips on how to choose the right sized turkey for a delicious Thanksgiving dinner, how to stuff a turkey, and how long to cook a turkey. To begin the turkey recipe, first remove the giblets from the bird. Place orange wedges and onions inside the turkey cavity. Also add oregano, salt, pepper, and butter in the cavity. Secure the neck flap with skewers. Turn the bird over and stuff the bigger cavity with butter, onions, oregano, and orange. Place the turkey on an adjustable rack. Pull out some fresh oregano and chop it. Mix it with butter, salt, and pepper. Rub this on the outside surface of the bird. Place it in the oven and let it cook. Monitor it to prevent burning. Next, create a stock from the neck, giblets, and onions. The stock in the turkey recipe prevents burning. Baste the bird again. Check and repeat if necessary.
